Tasty Tuesday: Cauliflower Poppers

I have a really easy recipe to share with you today that I have come to love as a side! I found the recipe for cauliflower poppers on Pinterest and decided to try them with my chickpea burgers, since the caption on the pin said they taste like french fries. I don't know if they really taste much like french fries, but they can totally replace them as a healthier, delicious alternative. So here is the recipe:

1 head of cauliflower (if there are more than 2 of you, you'll need another head)
1/4-1/3 cup olive oil
salt
pepper

1-Pre-heat oven to 400 degrees.
2-Wash cauliflower and cut it into bite size pieces. Place cauliflower in a large bowl (one that has enough room to shake up the contents).

3-Add oil, salt and pepper to cauliflower.

4-Place lid on bowl and shake it up to coat cauliflower.

5-Add more salt and pepper if necessary. Make sure it has a good coating on it.
6-Place on pan and put in the oven for about an hour. Stir every 20 minutes or so.

7-Enjoy! You can dip them in catsup or bbq sauce if you want.
